The Mother Hubbards restaurant just outside Cashel, Co Tipperary, is an unprepossessing building, sitting on the side of a minor national road, its sign partly blocked by the mouldering forecourt canopy of a now defunct petrol station.

It serves hearty, simple food. It has four versions of a full Irish breakfast, not counting the vegetarian version, and bacon and cabbage pops up frequently as a special on the dinner menu. By all accounts it does a very good apple pie.

The website lists its owners as John, who has “many years experience in management”; Roseann, who “has been involved in the industry for over five years”; and Michael, who “has a wide variety of experience”.
